rosemary and spice plum tarts

happy second day of fall! ya’ll don’t know just how excited i am to start a beautiful new season! i won’t even go into it because this blog post will be way too long! i want to keep this post short and simple to match the recipe!

if you know me, you know i have a love/hate relationship with puff pastry! i absolutely love eating anything made with puff pastry, but i have had the worst experiences with making it! it’s just one of those things that i probably won’t attempt again for a very long time. which is why the star of this recipe is store bought puff pastry!!

found at any big grocery store in the frozen aisle, you can buy sheets of frozen puff pastry and with a short thaw time, you can have something delicious straight from the oven in no time! whether you’re making something sweet or savory, these work SO wonderfully! let’s get into it!


1 sheet of frozen puff pastry
2-3 plums, sliced thin
1/4 cup brown sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
1 egg, for egg wash
raw turbinado sugar
fresh rosemary


remove one sheet of puff pastry from the freezer and set aside at room temperature to thaw (or according to package directions).

preheat oven to 400 degrees F.

cut the plums in half and then cut into very thin slices.

cut sheet of puff pastry into 9 equal rectangles. i use a pastry wheel cutter (pizza cutter works too) to make it easier! with a fork, prick the center of each rectangle a few times.

in a bowl, combine brown sugar and spices and mix well. set aside.

arrange the plums on each rectangle. i use 4 sliced per rectangle. sprinkle brown sugar mixture over the plums.

beat the egg in a small bowl. brush over the puff pastry around the plums. sprinkle with turbinado sugar.

sprinkle rosemary leaves over plums and bake for 15-18 minutes, until the pastry is golden brown.

let cool and enjoy!!
